Beef Galette

Now that the temperature is dropping and the daylight hours are shorter, comfort food is in order. Spoil yourself with tasty treats that smell and look inviting, too. This recipe and photo from Foodland Ontario, foodlandontario.ca, serve as motivation to cook up something special.

This free-form beef pie is delicious enough to get you through Ontario’s cold weather!

Preparation Time: 15 minutes; Cooking Time: 12 minutes;

Serves 6

1-1/4 cups (300 mL) all-purpose flour
1/4 tsp (1 mL) salt
1/2 cup (125 mL) cold butter, cubed 5 tbsp (75 mL) ice water
Filling:
1 tbsp (15 mL) butter
500 g Ontario beef top sirloin, sliced into 1/2-inch (1 cm) pieces
1 tsp (5 mL) dried thyme
1/2 tsp (2 mL) each salt, pepper and dried rosemary
1 small Ontario onion, diced
1 clove Ontario garlic, minced
1 Ontario carrot, diced
1 tbsp (15 mL) cornstarch
1 cup (250 mL) sodium-reduced beef broth
1 Ontario egg yolk; 1 tbsp (15 mL) water
1/4 cup (50 mL) chopped fresh Ontario chives

In large bowl, mix together flour and salt. Using pastry blender or two knives, cut in butter until mixture resembles pea-size pieces. Add 1 tbsp (15 mL) of the water at a time, tossing with fork to form smooth ball. Trace 9-inch (23 cm) circle in centre of a piece of parchment paper. Using well-floured rolling pin, roll out dough onto parchment paper; about 1/2-inch (1 cm) larger than the circle drawn. Place on baking sheet; refrigerate until ready to use.

Filling: In large deep skillet, over medium-high heat, melt butter. Stir in beef, thyme, salt, pepper and rosemary. Brown beef on all sides. Stir in onion, garlic and carrot; cook, stirring occasionally, for 5 minutes. In small bowl, whisk cornstarch into broth, pour into skillet; cook until thickened. Set aside to cool.

Spoon beef mix onto centre of pastry; fold over pastry edge to hold beef mix in, leaving centre uncovered. In small bowl, whisk together egg yolk and water; brush over pastry edge. Cut circle of foil just big enough to cover exposed beef mix; place over beef mix. Bake in 375°F (190°C) oven for 45 minutes. Let stand for 10 minutes before slicing. Sprinkle with chives.
