Beef Shawarma Wrap

It’s a long winter, so give yourself a health boost by planning home-cooked meals that are both nutritious and filling. This recipe (and photo) from Foodland Ontario, foodlandontario.ca, will hit the spot.

This is a flavourful take on a classic staple. Instead of a wrap, you can serve the beef and vegetables over rice or tossed in a salad; simply thin down the tahini sauce to a dressing consistency.

Preparation Time: 20 minutes
Marinating Time: 4 hours or overnight
Cooking Time: 4 to 5 minutes
Makes 4 servings

Beef:
1/2 tsp (2 mL) each ground cinnamon, ginger, cumin, smoked paprika and salt
1/4 tsp (1 mL) each ground coriander and cardamom
Pinch cayenne pepper
250 g Ontario beef round steak, cut into very thin strips
3 tbsp (45 mL) each white vinegar and fresh lemon juice
1 tbsp (15 mL) olive oil
Half small Ontario onion, sliced
2 cloves Ontario garlic, finely chopped
Tahini Sauce:
1/3 cup (75 mL) tahini
2 tbsp (25 mL) each fresh lemon juice and hot water
1 clove Ontario garlic, minced
1/4 tsp (1 mL) salt
Assembly:
1 tbsp (15 mL) olive oil
1 cup (250 mL) chopped Ontario tomato
1 Ontario mini  cucumber, thinly sliced
1/4 cup (50 mL) thinly sliced Ontario red onion
2 tbsp (25 mL) chopped fresh Ontario mint or Cilantro (coriander)
4 large flour tortillas
4 small Ontario lettuce leaves
1 small dill pickle, thinly sliced
Hot sauce

Beef: In medium bowl, combine cinnamon, ginger, cumin, paprika, salt, coriander, cardamom and cayenne. Add beef; stir to coat well. Stir in vinegar, lemon juice, oil, onion and garlic. Cover and refrigerate for at least 4 hours or, preferably, overnight.

Tahini Sauce: In small bowl, whisk together tahini, lemon juice, hot water, garlic and salt. It should be spreadable; add more hot water, if required. (Can be covered and refrigerated for up to 1 day.)

Assembly: In large skillet, heat oil over high heat. Add beef with marinade; cook, stirring frequently, until liquid has evaporated and beef is cooked through. Set aside.

In medium bowl, combine tomato, cucumber, onion and mint. Working with 1 tortilla at a time, spread with one-quarter of the tahini sauce. On bottom third of tortilla, place a lettuce leaf. Top with one-quarter each of beef mixture, tomato mixture and pickle slices. Sprinkle with hot sauce. Folding in sides of tortilla, then roll up to enclose filling. Repeat to make 4 wraps. Secure with toothpicks. Slice rolls in half crosswise on a diagonal.
