Microwave Maple Apple Mug Cake

Make these in large individual microwave-safe coffee mugs. The spice combination is delicious, but you can also use just cinnamon. The recipe can easily be doubled but cooking one or two mugs at a time works best. Add a scoop of ice cream and it’s dessert.

Microwave Time: 10 to 12 minutes
Makes 2 servings

2 Ontario apples (such as empire, ambrosia or McIntosh), diced
2 tbsp (25 mL) each Ontario maple syrup and water
1/2 tsp (2 mL) ground cinnamon; pinch salt
2 tbsp (25 mL) butter
1/2 cup (125 mL) store-bought pancake and waffle mix
2 tsp (10 mL) ground flaxseed
1 tsp (5 mL) ground cardamom
1/4 cup (50 mL) 2% or 3.25% Ontario milk
1 large Ontario egg
1/4 tsp (1 mL) freshly grated nutmeg
Garnish: Ontario maple syru

Set one-quarter of the diced apple aside for garnish; divide remaining apple into two 2-cup (500 mL) mugs. Top each mug with 1 tbsp (15 mL) each maple syrup and water, 1/4 tsp (1 mL) cinnamon and salt, then 1 tbsp (15 mL) butter.

Microwave on High for 6 minutes, stirring halfway through cooking time, until apples are bubbling and softened. If more time is needed, cook for 1 to 2 minutes longer in 30-second increments.

In liquid measuring cup, using fork, whisk together pancake mix, flaxseed, cardamom, milk and egg. Divide mixture on top of apples without stirring; top with nutmeg.

Microwave on High for about 3 minutes, or until topping is cooked through and no longer moist on top. If more time is needed, cook for about 1 minute longer in 30-second increments. Let cool slightly (be careful, they will be very hot). Garnish with reserved apple and drizzle with maple syrup.
