Fresh And Delicious
Good things are, indeed, grown in Ontario. This is a great time of year to feast on fresh produce and locally grown food, from strawberries and milk to meat and vegetables. This recipe (and photo) from Foodland Ontario, foodlandontario.ca will inspire you.
Preparation Time: 25 minutes
Cooking Time: 15 minutes
Serves 6 to 8
6 cups (1.5 L) chopped Ontario greenhouse tomatoes
1-1/2 cups (375 mL) slivered cooked Ontario roast beef, pork or chicken
1/3 cup (75 mL) vegetable oil
1/2 cup (125 mL) chopped fresh Ontario parsley
3 tbsp (45 mL) chopped fresh Ontario chives
1 clove garlic, minced
1 tsp (5 mL) Worcestershire sauce
1 tsp (5 mL) salt
1/2 tsp (2 mL) crushed red pepper flakes
1/4 tsp (1 mL) pepper
2 cups (500 mL) penne pasta
Instructions:
In large salad bowl, place tomatoes and cooked meat. In small bowl, stir together oil, parsley, chives, garlic, Worcestershire sauce, salt, red pepper flakes and pepper. Pour over tomatoes and meat; toss gently; let stand at room temperature while cooking pasta.
In large pot of boiling salted water, cook pasta according to package directions until tender. Drain well. Add to tomato and meat mixture. Toss well and serve.
Tip: If you don’t have leftovers from a roast, purchase slices of cooked beef, pork or chicken from the deli section of your grocery store.
